- ca. 300ml milk
- 2 eggs
- 6 heaped tablespoons flour
- 1/2 teaspoon of baking powder
- pinch of salt
- blueberries and currants
- brown sugar
- some edamer-cheese
- mix milk, eggs, flour, baking powder and salt together until you have a nice and smooth batter (you might have to vary a bit with the right amount of milk and flour, I never really measure them)
- heat a pan and add some oil. Once it's hot enough pour in the batter and let it stock a bit.
- then 'sprinkle' the berries evenly on the pancake
- once the batter is not too runny anymore, turn the pancake, but don't let it cook for too long on the 'berry-side'
- take it out of the pan and turn it again onto a plate so that the berries are on the upside
- sprinkle some brown sugar over the berrypancake and add some very thin slices of edamer-cheese (really not much, just a tiny bit, but that makes an interesting flavour)
