Quick Fish Soup


This is especially good if it's cold outside and you don't have much time.



  • 2 pollock filets (Seelachsfilets)

  • 1 spring onion

  • 1/2 zucchini

  • 1 tomato

  • 1/2 carrot

  • 1/2 cupcisum

  • 1 mushroom

  • currysauce (leftover from a BBQ)

  • a bit of broth

  • salt, pepper, curry, paprika



  1. Check that there are no fishbones left and cut the fish and the vegetables in small pieces.

  2. Heat some oil in a pan and as soon as it is hot enough add the fish and fry it.

  3. Then add the veggies and stirfry all the ingredients for 2-3 minutes.

  4. Add the currysauce, a bit of broth and season to taste and enjoy.

Berrypancake

  • ca. 300ml milk
  • 2 eggs
  • 6 heaped tablespoons flour
  • 1/2 teaspoon of baking powder
  • pinch of salt
  • blueberries and currants
  • brown sugar
  • some edamer-cheese
  1. mix milk, eggs, flour, baking powder and salt together until you have a nice and smooth batter (you might have to vary a bit with the right amount of milk and flour, I never really measure them)
  2. heat a pan and add some oil. Once it's hot enough pour in the batter and let it stock a bit.
  3. then 'sprinkle' the berries evenly on the pancake
  4. once the batter is not too runny anymore, turn the pancake, but don't let it cook for too long on the 'berry-side'
  5. take it out of the pan and turn it again onto a plate so that the berries are on the upside
  6. sprinkle some brown sugar over the berrypancake and add some very thin slices of edamer-cheese (really not much, just a tiny bit, but that makes an interesting flavour)

Banana Shake

  • 4 very ripe bananas
  • 500 ml milk
  • 1sp of brown sugar
  • 2sp of shredded coconut
  • a pinch of cinnamon

Put all the ingredients together in a shaker and puree them, using a mixer. Then it’s best to put the banana shake back into the fridge for a while until it’s nice and cold.

It’s good on its own but even better with some icecubes or a spoonful of vanilla icecream.

Asparagus Stir-Fry

  • green and white asparagus
  • potatoe
  • spring onion
  • tomatoe
  • eggplant (aubergine)
  • garlic, ginger
  • salt, pepper
  1. peel the white asparagus and the bottom-third of the green asparagus, then cut in pieces of 4 cm
  2. chop the other ingredients and heat some oil in a pan
  3. first stir-fry the potatoe and the asparagus (not the heads) until they start to get golden-brown and tender
  4. add the other vegetables and fry for another 4 minutes
  5. season with salt and pepper

It’s simple, quick and nice on it’s own as a small snack. If you’re really hungry have some fresh bread with it, rice or couscous.

Tomato-Sauce 3 in 1

It’s quick, it’s simple, it’s yummy and great for different variations. All you need is:

  • tomatoes
  • garlic
  • spring-onions/onions
  • some salt, pepper and herbs

Chop it all up in small pieces, throw together in a bowl and mix it with the help of a food processor or a blender until it’s rather smooth.

When you chop the tomatoes into really small pieces it’s not necessary to peel them first.

Season with salt, pepper and herbs (fresh ones if you have) and posisbly some olive oil.

  1. It makes a great salsa to have with meet, bread or veggies.
  2. Heat it up as pasta-sauce
  3. Heat it up and when it’s hot, serve as soop with some cream/creme fraiche and roasted seeds and breadcrumbs.

Cinnamon Pasta - Two Variations

with Applesauce and frothed Milk:
  • cinnamon pasta
  • apples
  • raisins
  • almonds (chopped or sliced)
  • cinnamon, cardamom, brown sugar
  • milk
  • vanilla essence
  1. cut the apples in small pieces, heat some oil in a pot and cook them for a while, then add water, raisins, almonds and spices
  2. cook the pasta
  3. heat milk, add vanilla essence and froth it
  4. now put the pasta on a plate, top with applesauce, add the milk and some froth on top of it all

Fried with Banana and Cranberries:

  • cinnamon pasta (leftover from the day before)
  • banana
  • creamcheese
  • cinnamon
  • cranberryjam
  1. heat a pan, add some oil and then the pasta
  2. cut the banana in small slices and add, once the pasta begins to get crispy
  3. add some creamcheese and cinnamon (maybe also some sugar)
  4. mix well, put in a bowl and top with cranberrjam
